• For Lamb Shank: Sear the shanks in a heavy pot until browned on all sides. Add chopped vegetables (like onions and carrots), a splash of red wine, and broth. Cover and braise in the oven at 325°F (160°C) for 2.5 to 3 hours until the meat is tender. - Serving: Pair with your chosen wine. For lamb chops, Pinot Noir or a medium-bodied white like Assyrtiko is ideal. For roast lamb, a full-bodied red like Cabernet Sauvignon or Rioja works best.
