Ingredients :

  • Lobster: 1 pound lobster meat, chopped
  • Aromatics: 1 onion (chopped), 1 carrot (chopped), 2 celery stalks (chopped), 2 cloves garlic (minced)
  • Liquids: 1/2 cup dry white wine, 4 cups seafood stock
  • Cream: 1 cup heavy cream
  • Butter and Flour: 2 tablespoons each, for the roux
  • Seasonings: Salt, pepper, cayenne pepper, and a splash of sherry or brandy (optional)

Instructions:

  1. Prepare the Base: In a large pot, melt the butter over medium heat. Add the chopped onion, carrot, celery, and garlic, and sauté until softened, about 5-7 minutes.
  2. Create the Roux: Sprinkle the flour over the vegetables and stir continuously for 2-3 minutes to cook out the raw flour taste. Slowly pour in the white wine, stirring constantly, and cook until slightly reduced
  3. Add Stock and Simmer: Pour in the seafood stock and bring the mixture to a simmer. Allow it to cook gently for about 20 minutes until the flavors are well combined.
  4. Blend and Add Cream: Using an immersion blender or a standard blender, puree the soup until smooth. Return it to the pot and stir in the heavy cream. Add the chopped lobster meat and heat through gently without boiling.
  5. Finish and Serve: Season with salt, pepper, and a pinch of cayenne. For an extra depth of flavor, add a splash of sherry or brandy. Serve hot, garnished with a drizzle of cream or a sprinkle of fresh herbs.
  6. Wine Pairing: Pair your lobster bisque with an oaked Chardonnay or a Champagne Blanc de Blanc for a luxurious experience. For a unique twist, consider a dry Amontillado Sherry or a slightly sweet Sauternes, which provide a delightful contrast to the bisque’s richness
